When you stroll around the second floor of Conrad S Maison, you will easily notice this restaurant named Huma Mediterranean Cuisine because of its eloquent Middle Eastern inspired architecture.
Entering this restaurant will keep you amazed because of its elegance. With the intricate structure of the high ceiling, curtains, artistic chandelier, table setting, even the background music, the dining experience is comparable to a Mediterranean escape.
NOTE: Do not get bewitched by this place if you don't like Mediterranean food!
Mediterranean dishes are quite complex to read and are most of the time lucky guesses for the unacquainted, but the menu contains clear pictures to help you out. My mom, who we took to that place as a treat for her, is new to this kind of restaurant so she really asked questions to the captain waiter, Julie. Good thing she was pretty knowledgeable and helped her out in deciding whether she should order that dish or not.
IT'S CHOWTIME!
MANGO SHAKE
The mango they used in their shake was ripe and sweet. This drink has the mango well-concentrated, almost like a puree.
HUMMUS (PHP 180)
The pita bread was served warm and tasted like newly-baked pan de sal. The hummus' flavor is not too strong. Mr. C said that it was the finest hummus he ever tasted so far.
SHAWARMA LAHAM (PHP 400)
My mom's order. This dish contains two giant Arabic bread, tahini sauce, raw vegetables, beef, and fries. My mom was not impressed by its consistency but for me, it's already supple enough. The tahini sauce was OK. The vegetables used are tasty. The serving was too large for her we were able to take some out.
OUZI LAMB (PHP 665)
Mr. C and I are both lovers of lamb so this dish instantly became a hit! The Lebanese spices used to season the meat are well-balanced, not too spicy, not too salty, just enough to give you the ideal umami.
I was not able to get a picture of the garlic dip. Just to share with you, it heightened the level of greatness of this dish!
SAWDED DAJAJ (PHP 200)
It's been a while since I had eaten liver so I grabbed the opportunity. It is sour, most probably because of the lemon sauce, with an aftertaste of the liver's bitterness. Honestly, it only tasted like a sour adobo where the chicken livers are friend first.
AL FAIRUZ RICE (PHP 120)
It sounded like a delicious kind of rice so I included this in our order. However, it turned out to be the other way around. It's grainy and coarse, in contrast with the sticky soft type of rice that I like.

Why didn't I go for the lamb dish when I like it too? Mr. C won again this time!
WHAT WE LIKED:
- We enjoyed the ambiance of the place. It felt like we departed from Manila and teleported to Lebanon! The consistency of the theme is remarkable. Even the comfort room is designed with Islamic architecture.
- We were amazed by the plating of the dishes. The containers were sophisticated and creatively presented.
- We loved the garlic dip we STRONGLY recommend going for it! For only 35 PHP, adding this dip to your meal will take your breath away!
- Once you request for the bill, the waiter will give you cold towels to wash your hands with.
- It took a while before someone assisted us to get our order. We were extremely starving that time to the point that Mr. C told me that we would have left the place had there been no waiter to assist us in one minute. Good thing someone approached us within that time frame.
- To all others who don't like their rice grainy, do not get curious with Al Fairuz rice!
WANNA-CHOW-AGAIN METER
Yes, yes, yes. We want to try the other dishes they have on their menu and get mesmerized by interiors all over again. Please take us back here!
